Ingredients:
- 100g/4oz light muscovado sugar
- 1 star anise
- 1 cinnamon stick
- 4 cloves
- 150ml water
- 1 lemon, thinly sliced
- 2 clementine's, thinly sliced
- 1 half orange, juiced
- 150ml Cointreau (or another orange liqueur)
- 750ml/1¼ pint bottle of light red wine
- Twist of orange zest and cinnamon stick for garnish
- Ice cubes
Method:
Step 1
In a saucepan combine 100g of light muscovado sugar, 1 star anise, 1 cinnamon stick, 4 cloves, and 150ml water. Heat gently, stirring occasionally to dissolve the sugar.
Step 2
Once the sugar has dissolved bring to a boil and simmer gently for about 2 minutes to infuse the spices. Then turn off the hob, remove from heat, and allow the syrup to cool slightly.
Step 3
Pour the spiced syrup into a large jug and add the thinly sliced lemon, 2 sliced clementine's, and the juice of half an orange.
Stir in 150ml liquor and a 750ml bottle of light red wine. Mix everything together, cover, and let it chill for at least a couple of hours in the fridge or overnight for a richer flavour.
Step 4
When ready to serve be sure to strain the mulled wine to remove any spices and larger fruit pieces for a smoother finish.
However, you can always keep the sliced fruit in the drink for added flavour and a decorative touch.
